Yummy Flank Steak Wheels

The weather has been so great lately and we have been BBQ’ing a lot lately. But I’ve been looking for some new recipes for grilling. Then I remembered the pinwheels I used to get from Costco, and found this recipe. This actually turned out very, very good…

  • 1 Pound Flank Steak (butterflied)
  • Some Salt & Pepper
  • 6 oz Asiago Cheese (shredded)
  • 4 oz Spinach Leaves
  • 8 to 10 Wooden skewers (soaked in water)

To butterfly the flank steak, have the meat grain running up and down in front of you. With a knife, cut the meat in half. You want a thinner and larger steak. Continue cutting the steak in half until you reach 1 inch from completely cutting through.

Lay the cut steak so that the grain is running left to right.  Begin layering the flank steak with salt, pepper, cheese and then spinach.

Begin rolling the flank steak tightly and away from you. Evenly insert the skewers 1 to 2 inches along the seam of the “pinwheel” to hold it together. Cut in between each skewer but not against the skewer. Make sure there is an even amount of meat on each side of the skewer.

Grill the wheels on each side for about 4 minutes or until desired.
